Wackies (aka, No Bake Cookies)
My Great Grandma Pansy used to make these cookies for us. She always called them Wackies. Growing up, I just assumed that this name was the only name associated with this cookie. It wasn’t until years later when I had heard someone talking about No Bake Cookies and associated the two.
2 cups sugar
- 3 Tablespoons unsweetened cocoa powder (I do heaping Tablespoons)
- 1/2 cup butter
- 1/2 cup milk
- 1 pinch salt
- 3 1/4 cups quick cooking oats
- 1/2 cup peanut butter
- 1 teaspoon vanilla extract
In a saucepan, bring sugar, cocoa, butter, milk and salt to a rapid boil for 1 minute.
|What the mixture will look like when it’s boiling|
Add peanut butter, vanilla, and quick cooking oats; mix well.
|(I love the way peanut butter looks when it melts.)|
Working quickly, drop by teaspoonfuls (You can also use a cookie scoop.) onto waxed paper.
Let cool and set up, then enjoy!
*Note – The original recipe calls for 3 cups of quick cooking oats, but I have found that 3 1/4 cups makes the cookies set up just perfect for me.
