Fluffernutter Crackers

Crackers topped with peanut butter and marshmallow creme.

This is one of my go to snacks when I want something quick, something a little salty, and something a little sweet.

These are easy.  And really, there’s not really a recipe to this.  It’s just me telling you what I do. 

First, Get your favorite buttery crackers.  I like Ritz crackers.  (My Granny used to call them Hi-Hos.)  Get however many crackers out that you’ll think you’ll want.

Second, Get your favorite peanut butter.  Doesn’t matter if it’s crunchy or creamy.  I prefer creamy peanut butter for these though.  Spread a swipe of peanut butter on one side of your cracker.

Third, Get a jar of marshmallow creme.  With a spoon, scoop out how much marshmallow creme you’ll want on one cracker.  (I usually do about 1-2 teaspoons per cracker.)  The marshmallow creme will be sticky, so you can go about getting it on your cracker and off your spoon a couple of ways.  You can dirty up another spoon and use that spoon to rake it onto your cracker or you can do what I do and just use a clean finger.  

Fourth, Enjoy your easy, delicious, salty, sweet snack.

Variations include cutting a big marshmallow and putting half on top of the peanut butter cracker and putting it under the broiler for a minute or less til the marshmallow is toasted and melted.  But be warned they are very messy like this because the marshmallow is melted and the peanut butter is melted, so it will be runny and messy.

You can also top these with another cracker, but I prefer them to be open-faced.
