Apple Cake with Rich Icing

 

When I think of Fall, I don’t think of pumpkin things.

Everyone else is pumpkining this or pumpkining that.  Pumpkin cinnamon rolls, pumpkin creamer, and so on.  Pumpkin, pumpkin, pumpkin.

Well, I hate do not like pumpkin.  While I will make some pumpkin things for my family.  I do not enjoy them.  And when I think of Fall, I don’t think of making pumpkin things.  I think of making apple things.

I love apple things.  Apple pie, Apple Cinnamon Biscuit Rolls, and this Apple Cake.

We make this cake for Thanksgiving and Christmas every year.  If we don’t have this cake on either holiday, it’s not complete.  This cake is starting to make it’s appearance this year.  And I’m sure my family couldn’t be happier about that.

This cake is a very dense, moist cake.  And the rich icing just makes this cake so delicious.  This cake hardly ever makes it to the second day, because you just can’t leave it alone.

Here’s what you need to make this cake:

  • 1 cup oil
  • 2 cups sugar
  • 2 eggs
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 2 1/2 cups flour
  • 1 teaspoon vanilla
  • 1 cup chopped walnuts (or whatever nut you want, we usually use walnuts)
  • 3 cups chopped apples.

Here’s how to put it together:

First things first.  Preheat the oven to 350° F.

Beat the oil, sugar and eggs together.

Next, Add the rest of the ingredients and stir together well.  Know that this is a very stiff batter (which you cans see from the pic below) so get a good wooden spoon or make it in a stand mixer if you have one.  I think next time I will make this in my stand mixer.

  This is the mixture without the apples and nuts.↑

As you mix the apples and nuts in, the apples will juice and loosen the mixture up a little.↑

 Pour the mixture into a 13X9  inch greased and floured pan.  Most of the time I just use baking spray that has flour in it and it does just fine.

Bake the cake for 40 minutes or until a toothpick inserted in the cake comes out pretty clean.

The cake will be pretty brown after its baked.

Let the cake cool, while you make the icing.

Here’s what you need for the Rich Icing:

  • 3 1/4 cup powdered sugar
  • 1/4 cup butter
  • 1/4 cup half & half
  • 1 teaspoon vanilla
  • 1/2 cup walnuts (for topping)

Directions for the Icing:

Beat all ingredients together until it’s really well mixed and is a good spreading consistency.  Spread it on the cooled cake and top with chopped walnuts.

 I don’t know what this thing is called. I just call it a chopper. I use it to chop up nuts, chop up strawberries, and cut butter into biscuits. If you have one of these, it is really handy for chopping up the nuts.
